The first idea: the legend of the "lid"
There are several legends about how this first Andalusian tapa came about. But, the most consolidated dates back dozens of years. King Alfonso XIII, during an official visit to Cádiz stopped at El Ventorillo del Chato (an inn between Cádiz and San Fernando). The monarch ordered a glass of wine and the owner of the bar served him a slice of ham on top. The owner of the restaurant told him that it served as a "lid" to prevent the sand from reaching the inside of the glass.

The king liked the idea so much that he asked for another glass of wine and that it be served in the same way. Those who accompanied the king requested the same. Thus the cover was born.
